Fudgy Sweet Potato Brownies

Getting enough protein during pregnancy is incredibly important. Protein helps with fetal bone and brain development, placenta growth to help feed nutrients to the baby, muscle function for baby and parent-to-be and so much more.

This week in the Freya kitchen, we are cooking up some fudgy sweet potato protein brownies. With the changing of seasons, what our bodies crave changes too. This is a great transitional recipe from summer to spring with the addition of sweet potatoes. This recipe is inspired by Making the Thyme for Health’s blog. I added some chia seeds to boost the fiber, iron, and omegas in this recipe which are great for baby’s eyes and brain growth as well as postpartum depression.

Benefits of Ingredients:

  • Sweet potato puree - can help with morning sickness, full of iron, fiber, and beta carotene

  • Maple syrup - it has a lower glycemic index than sugar and has antioxidants and manganese

  • Peanut butter - full of fiber, folate, and protein

  • Dairy-free milk (I used almond milk) - great for bone health, high in magnesium, and the omega 3s are great for fetal heart health

  • Unsweetened cocoa powder - great for inflammation

  • Vanilla protein powder - a boost of protein

Chopped walnuts - high in vitamin E, fiber, and omega 3s

Eating nutrient-dense foods helps ensure that pregnant people get enough of everything they need for a healthy pregnancy. These rich and fudgy brownies are great for a sweet treat or post-workout snack.

Enjoy this recipe in good health!

Xoxo,

Morgana
